The Art of ham-making since 1958
Gallina ham has been produced in this plant since 1958!
After his studies, Mr. Mario Gallina (Campora, 1932-2003) learned a job, the commercialization of local products in the province. Mario inherited from his family some knowledge about preserving and processing meat, which he soon put into practice with perseverance and dedication in his own business. The new job became a real passion and the energy invested seemed to reward him.
Mrs. Maria Moretti (Lagrimone,1934-2019), Mario’s wife, has always followed the administrative and organisational spheres meticulously, with passion and integrity, earning great respect and esteem from all collaborators.
Mario’s company became a consortium member of the newly established Parma Ham PDO Consortium in 1968.
80S-90S YEARS
Mario, supported by his son Alcide Gallina, who became passionate about the business at a very young age and joined them after his studies, were a very united and ambitious team. They reaped satisfaction with humility and in the face of an increasing demand for their product, they decided to make major investments in restructuring and expanding the premises used for the production and curing of Gallina ham.
To support this growth, participation in national and international fairs has been worthy. Among theese events: Cibus trade fair in Parma, where the first participation dates back to the 1980s.
The company, strives for excellence, putting product and process quality first, finding motivation in a diversified customer base, consisting of the more traditional Ho.Re.Ca and Retail channel, and more structured realities such as GO and GD for which it develops dedicated lines.
2013
In 2013, Alcide Gallina decided to invest in an innovative and more technological sector that seemed destined to gain an important market share in the medium term: the slicing of cured meats in ATM trays, processed with artisanal care, excluding any freezing of the raw material.
The production site of the subsidiary company Food Mania SRL is located in Langhirano, just a few kilometres from the A1 highway (Parma), in the perimeter of the PDO Parma Ham processing area.
Food Mania is organised to slice cold cuts and cheeses (Prosciutto di Parma PDO, primarily) into pre-formed trays, offering a new level of service in the sale of Gallina ham.
Indirectly, Gallina Mario makes a selection of products to include in its commercial line and expands its supplier base, acquiring new skills on several fronts.
2018
In 2018, the last edition of Cibus pre-pandemic Covid-19.
At this juncture, new products are presented to expand the catalogue offer and the third generation joins the company: Laura and Andrea Gallina.
2022
The company follows processes developed in over 60 years of masterhood, training young guys and thinking about how to enhance the aspects for which technology can provide a valuable help.
